Green Detox Soup
Well, we are three weeks into the new year. How are you doing? How are you feeling? Are you still working on your goals / focuses of the year? I am really making an effort to do one thing every day that pushes me closer and closer to my goals. One main focus this year is my health, specifically my digestive systems health. Our digestive system is probably the most important part of our health as true health starts in the gut. I knew I wanted to start the year with a detox of sorts but juicing this time of year isn’t ideal because of the colder weather. Instead I opted for a soup detox. This allows the digestive system some rest while still loading the body up with nutrient dense foods.
I created this fabulous Green Detox Soup that is packed full a vegetables but also tastes delicious. I wanted to share it with you today. I hope you get a chance to try it out. It’s a wonderful way to treat you body and I think you will really enjoy it.
Green Detox Soup Recipe
ingredients
1/2 cup leek diced
4 garlic cloves minced
1 head broccoli chopped
3 zucchinis chopped
2 cups spinach
1 cup parsley
1 cup green peas
1 cup shiitake mushroom diced
2 tbsp coconut oil
2 cups chicken bone broth
kale sprouts for garnish
directions
sauté leeks and garlic in coconut oil over medium heat in a large pot for 3ish minutes
add in broccoli and zucchini continue to sauté for another few minutes
add in spinach, parsley, green peas, mushrooms and broth
bring to a boil then reduce to simmer for 10 - 15 minutes or until the broccoli is very soft
salt and pepper to taste
pour everything into a blender or use an emulsion blender and blend until smooth (be careful as it is very hot!)
pour back into pot and serve immediately
garnish with kale sprouts or pumpkin seeds or both
eat and enjoy a happy belly and body
